Lying just across from the Popes’ Palace, La Mirande has gone through many incarnations. Ruins from the original 14th-century cardinal’s residence were used in restoring the baroque mansion, now reborn as a 26-room hotel in the style of the Age of Enlightenment. You’ll be fascinated by the rich tapestries, indienne fabrics, silk-lined curtains, vintage wallpapers, and Carrara marble, as well as modern touches, such as in-mirror televisions. Take a nightly gastronomic journey in the coffered-ceilinged restaurant; cooking classes teach Provençal secrets with copper pots over the kitchen’s wood-burning stove.
